Like many other countries all over the world; at Christmas time, Argentinians get together and celebrate. Their celebrations may be rather different to some countries because of the climate. In America, for example, we are used to winter snow and wrapping up warm at Christmas time-in Argentina, Christmas occurs in the summer, when the hot, dry winds called zonda blow from the equatorial north. Yet the Argentinians still like to celebrate in their own particular style-and using traditional Argentinian Christmas recipes. Because of the heat, the Christmas dinner is usually served outside in the shade under a tree or trellis; or on a veranda, and the table is decorated with rosebuds and jasmine instead of candles.

Argentinians like a roast at Christmas; but it is not the same kind of roast as that found on an American table. Argentinian Christmas recipes for a roast main course is a roast suckling pig-this is often accompanied by 3-inch-square pieces of steak that have been rolled and stuffed with mincemeat-seasoned olives, hard boiled eggs and spices. Argentinian Christmas recipes may also include pork, turkey and a variety of other meats. Different kinds of Christmas meals like roasted turkey, roasted pork, stuffed tomatoes, mince pies and Christmas bread and puddings are special treats for Argentinian families at this time of year. During the Christmas period families enjoy more Argentinian Christmas recipes at banquets and picnics-there are usually cakes and champagne, and people can watch and enjoy the fireworks at around midnight. Many plan a barbecue or picnic as their main Christmas meal-this enables them to take advantage of the pleasant weather. A barbecue is less trouble to prepare than the traditional roast dinner-especially if it is a very hot day. After a Christmas dinner using traditional Argentinian Christmas recipes, tables in Argentina are covered with sweet things and drinks like cider, beer and juices. This is very similar to other countries-many of us like to sit back and relax after Christmas dinner. It is good to sit around the table with family and friends feeling full and satisfied-at some point most people will want to pick at sweets and have a drink; and this is what the Argentinians do.

The people in Argentina eagerly wait for the time of the toast. This is another of their traditional Argentinian Christmas recipes-the toast is a drink that is prepared with different kinds of fruits; these are cut into pieces and mixed with juice and cider. Along with the special and usual holiday items, there are cakes topped with sidra which are served with dessert. Champagne also plays an important role in Argentinian Christmas drinks-it is also a common feature of many American Christmases.
